Rice Cooking Basics

Apple Walnut Rice With Grilled Apple Sausage


Ingredients:

Amount Ingredient
3 T butter or margarine, divided
2 1/2 c chicken broth
1 1/2 c California Premium medium grain rice
1 c onion, chopped
2/3 c celery, sliced
1 1/2 c apple, peeled and diced
2 T pure maple syrup
1 1/2 T fresh thyme, chopped
1/2 T fresh sage, chopped
1/2 c toasted walnuts, chopped
4 ea chicken apple sausage
12 ea fresh sage or thyme sprigs

Directions:

1| Combine 1 tablespoon butter and the broth in a large saucepan and bring to a boil.

2| Add rice; cover and cook over low heat for 20 minutes; remove from heat and fluff with a fork.

3| Meanwhile, melt remaining butter in a large skillet. Add the onion and cook over medium heat for 10 minutes until very soft. Add the celery and apple and cook for 5 minutes more.

4| Add the cooked rice to the skillet, then stir in the syrup, herbs and walnuts. Season to taste with salt and pepper.

5| Grill the sausages until hot and lightly charred.

6| Serve each sausage on a bed of rice garnished with fresh sage or thyme sprigs.
