Apple Walnut Rice With Grilled Apple Sausage

Ingredients:

| 3 T | butter or margarine, divided |
| 2 1/2 c | chicken broth |
| 1 1/2 c | California Premium medium grain rice |
| 1 c | onion, chopped |
| 2/3 c | celery, sliced |
| 1 1/2 c | apple, peeled and diced |
| 2 T | pure maple syrup |
| 1 1/2 T | fresh thyme, chopped |
| 1/2 T | fresh sage, chopped |
| 1/2 c | toasted walnuts, chopped |
| 4 ea | chicken apple sausage |
| 12 ea | fresh sage or thyme sprigs |
Directions:
1| Combine 1 tablespoon butter and the broth in a large saucepan and bring to a boil.
2| Add rice; cover and cook over low heat for 20 minutes; remove from heat and fluff with a fork.
3| Meanwhile, melt remaining butter in a large skillet. Add the onion and cook over medium heat for 10 minutes until very soft. Add the celery and apple and cook for 5 minutes more.
4| Add the cooked rice to the skillet, then stir in the syrup, herbs and walnuts. Season to taste with salt and pepper.
5| Grill the sausages until hot and lightly charred.
6| Serve each sausage on a bed of rice garnished with fresh sage or thyme sprigs.
