Brown Rice, French Lentil Vegetable Pilaf

This recipe is a wonderful hearty pilaf, a fabulous side for a pork roast or beefsteak
Ingredients:

| 3/4 c | California-grown Calrose medium grain brown rice |
| 1 T | french lentils |
| 1 ea | cinnamon stick |
| 1 1/2 c | chicken broth |
| 1 T | olive oil |
| 1/2 c | onion, finely chopped |
| 1 t | garlic, chopped |
| 1/2 c | sweet red peppers, chopped |
| 3 T | chives, chopped |
| 1/4 c | roasted pecans, chopped |
Directions:
In a medium saucepan bring broth to a boil. Stir in rice, lentils and cinnamon stick. Bring to a boil. Reduce heat to low, cover and simmer until all liquid is absorbed, about 45 minutes. Remove from heat; let stand covered, 5 minutes.
Meanwhile in a 10-in skillet, heat oil with medium high heat, sauté onion and garlic, until soft but not brown, add to the pan, red pepper and continue to sauté for 2 minutes. Remove from heat and set aside. Place hot rice mixture in a bowl. Add to rice mixture the sautéed vegetable mixture, pecans and chives. Gently stirring to mix. Salt and pepper to taste.
