California Rice Vegetable Medley

This recipe is a great side for fish, chicken or beef. A great colorful combination of vegetables and California White Rice, perfect for a summer dinner or any time.
Ingredients:

| 1 T | olive oil |
| 1/2 c | red onion, chopped |
| 1/2 c | carrots, chopped |
| 1/2 c | celery, chopped |
| 1/2 c | peppers, sweet, red, chopped |
| 1/2 c | frozen peas |
| 1 c | chicken broth |
| 3/4 c | California Calrose rice |
Directions:
1| Heat oil in skillet, add onion, carrot, celery and red pepper.
2| Sauté until tender. Remove from heat.
Bring the broth and rice to a steady simmer in a saucepan on top of the stove. Reduce heat to low and simmer covered 15 minutes, add all the vegetables. Continue to cook, covered for 5 minutes. Remove from heat; let stand covered 10 minutes. Fluff with fork and serve.
