Rice Cooking Basics

Cowboy Beans & Rice


Ingredients:

Amount Ingredient
1/2 c vegetable oil
1 q dehydrated onions*
2 q onions, chopped
1 q green bell pepper, chopped
3 gal cooked California medium grain brown rice**
3 gal canned pinto beans, drained
3 q prepared barbeque sauce

Directions:

1| Heat oil, add onions and bell pepper. Cook 8 to 10 minutes.

2| Add rice, beans and barbeque sauce to onions and bell peppers, stir well until thoroughly heated and well blended.

* Hydrate according to package directions
** Cooked California medium grain white rice can be substituted, if desired.


Serving Size:
One No. 6 scoop (2/3 cup) provides 1 bread alternate and 1/2 cup vegetable

Each Serving Provides:
120 calories, 5 grams protein, 1 gram fat, 23 grams carbohydrate, 2 grams dietary fiber, 0 milligrams cholesterol and 213 milligrams sodium.

Serving Suggestion:
Serve with hamburgers and cole slaw.
