Greek Rice Salad

Ingredients:

| 3 c | cooked California Calrose rice, chilled |
| 2 c | cooked chicken, diced |
| 1 c | cucumber, peeled and diced |
| 1 c | tiny cherry tomatoes |
| 2/3 c | kalamata olives, halved |
| 1/3 c | red onion, chopped |
| 1/2 c | feta cheese, crumbled |
| 1/3 c | extra virgin olive oil |
| 1/4 c | fresh lemon juice |
| 1 1/2 t | sugar |
| 1 1/2 t | dried oregano |
| 1 t | garlic salt |
| 1/4 t | ground black pepper |
Directions:
1| Place rice, chicken, cucumber, tomatoes, olives, and red onion in a large bowl; toss lightly.
2| Whisk together the olive oil, lemon juice, sugar, oregano, garlic salt and black pepper to make the dressing and drizzle over salad: toss well to coat.
3| Sprinkle with feta cheese.
