Pepperoni Rice

Ingredients:

| 1 lb | mushrooms |
| 4 c | water |
| 1/2 lb | pepperoni thinly sliced |
| 4 ea | bouillon cubes |
| 3 T | butter |
| 1 c | grated Parmesan cheese |
| 1 pn | saffron threads, crushed |
Directions:
In saucepan add water, bouillon cubes, 1 tablespoon of butter, saffron, and rice. Leave in saucepan until rice is thoroughly cooked. Saute 2 tablespoons of butter, mushrooms, and pepperoni in a separate pan. Mix sauted product and rice together. Serve with Parmesan cheese.
