Savory Brown Rice with Wild Mushrooms

Ingredients:

| 1 1/2 c | beef broth |
| 1/4 c | dry sherry |
| 2 T | butter or margarine |
| 1 c | California medium brown rice |
| 1/2 t | thyme |
| 1 ea | large leek, cleaned and sliced |
| 2 clv | garlic, minced |
| 3 c | wild mushrooms, sliced |
| 4 ea | fresh thyme sprigs |
| 1 ea | ground black pepper |
Directions:
1| Bring broth, sherry and 1 tablespoon butter to a boil in a large saucepan. Add rice, thyme and pepper; cover and simmer over low heat for 45 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork.
2| While rice is cooking, melt remaining butter in a large skillet.
3| Add leeks and garlic; cook over medium heat for 5 minutes, stirring frequently.
4| Add mushrooms and cook for 5 to 10 minutes more.
5| Garnish with fresh thyme sprigs.
