South of the Border Rice

Ingredients:

| 1 gal | California rice, premium medium grain rice, uncooked |
| 3 lb | condensed tomato soup |
| 2 gal | water |
| 1 q | dehydrated onions** |
| 2 q | chopped onion |
| 2 T | garlic salt |
| 3/4 c | chili powder |
Directions:
1| Measure 6 cups of rice into each of three 12x20x2 inch steamable pans.
2| Combine soup, water, onion and seasoning in stock pot. Bring to a boil. Pour approximately 14 cups of soup mixture over each pan of rice. Cover tightly with foil. Cook 30 to 40 minutes in 350-degree oven or until liquid is absorbed and rice is tender.

One No. 6 scoop (2/3 cup) provides 1 bread alternate
*If using long grain rice, use 6 lbs 11 oz of uncooked rice.
** Hydrate according to package directions.
