Rice Cooking Basics

South of the Border Rice


Ingredients:

Amount Ingredient
1 gal California rice, premium medium grain rice, uncooked
3 lb condensed tomato soup
2 gal water
1 q dehydrated onions**
2 q chopped onion
2 T garlic salt
3/4 c chili powder

Directions:

1| Measure 6 cups of rice into each of three 12x20x2 inch steamable pans.

2| Combine soup, water, onion and seasoning in stock pot. Bring to a boil. Pour approximately 14 cups of soup mixture over each pan of rice. Cover tightly with foil. Cook 30 to 40 minutes in 350-degree oven or until liquid is absorbed and rice is tender.

Serving Size:
One No. 6 scoop (2/3 cup) provides 1 bread alternate

*If using long grain rice, use 6 lbs 11 oz of uncooked rice.
** Hydrate according to package directions.


Each Serving Provides:
120 calories, 3 grams protein, 1 gram fat, 26 grams carbohydrate, 1 gram dietary fiber, 0 milligrams cholesterol and 445 milligrams sodium.

Serving Suggestion:
Serve with tacos, salad and tortilla chips
