Vegetable Pork Stir-Fry

Ingredients:

| 3/4 lb | pork tenderloin |
| 1 T | vegetable oil |
| 1 1/2 c | sliced fresh mushrooms |
| 1 ea | green pepper, cut into strips |
| 1 ea | zucchini, thinly sliced |
| 2 ea | celery, cut into diagonal slices |
| 1 c | thinly sliced carrots |
| 1 clv | garlic, minced |
| 1 c | chicken broth |
| 2 T | reduced-sodium soy sauce |
| 1 1/2 T | cornstarch |
| 3 c | hot cooked California rice |
Directions:
1| Slice pork across the grain into 1/8-inch strips. Brown pork strips in oil in large skillet over medium-high heat.
2| Push meat to side of skillet. Add mushrooms, pepper, zucchini, celery, carrots, and garlic; stir-fry about 3 minutes.
3| Combine broth, soy sauce, and cornstarch. Add to skillet and cook, stirring, until thickened; cook 1 minute longer.
4| Serve over rice.
