Rice Cooking Basics

Vegetable Pork Stir-Fry


Ingredients:

Amount Ingredient
3/4 lb pork tenderloin
1 T vegetable oil
1 1/2 c sliced fresh mushrooms
1 ea green pepper, cut into strips
1 ea zucchini, thinly sliced
2 ea celery, cut into diagonal slices
1 c thinly sliced carrots
1 clv garlic, minced
1 c chicken broth
2 T reduced-sodium soy sauce
1 1/2 T cornstarch
3 c hot cooked California rice

Directions:

1| Slice pork across the grain into 1/8-inch strips. Brown pork strips in oil in large skillet over medium-high heat.

2| Push meat to side of skillet. Add mushrooms, pepper, zucchini, celery, carrots, and garlic; stir-fry about 3 minutes.

3| Combine broth, soy sauce, and cornstarch. Add to skillet and cook, stirring, until thickened; cook 1 minute longer.

4| Serve over rice.
