Baked Salmon Cups

Ingredients

Ingredients (makes 12):

  • 2 cups cooked Calrose rice
  • 2 tbsp rice vinegar
  • 3 sheets seaweed (nori), cut into 12 squares
  • Cooking spray

Salmon filling:

  • 1 lb salmon, cubed
  • 2 tbsp mayo
  • 1–1½ tbsp sriracha
  • 1½ tbsp soy sauce (or tamari)
  • 1 tsp sesame oil

Toppings:

  • Sriracha, sesame seeds, chopped chives

Directions

  1. Heat oven to 400°F and spray a muffin tin.
  2. Mix warm rice with rice vinegar. Press rice onto each seaweed square, then into the muffin tin to form cups.
  3. Mix salmon with mayo, sriracha, soy sauce, and sesame oil. Spoon into cups.
  4. Bake 12–15 minutes, until salmon is cooked and edges are lightly crisp.
  5. Finish with toppings and enjoy✨
