Ingredients
Ingredients (makes 12):
- 2 cups cooked Calrose rice
- 2 tbsp rice vinegar
- 3 sheets seaweed (nori), cut into 12 squares
- Cooking spray
Salmon filling:
- 1 lb salmon, cubed
- 2 tbsp mayo
- 1–1½ tbsp sriracha
- 1½ tbsp soy sauce (or tamari)
- 1 tsp sesame oil
Toppings:
- Sriracha, sesame seeds, chopped chives
Directions
- Heat oven to 400°F and spray a muffin tin.
- Mix warm rice with rice vinegar. Press rice onto each seaweed square, then into the muffin tin to form cups.
- Mix salmon with mayo, sriracha, soy sauce, and sesame oil. Spoon into cups.
- Bake 12–15 minutes, until salmon is cooked and edges are lightly crisp.
- Finish with toppings and enjoy✨
