Caterpillar Roll

Ingredients

  • 300g Calrose rice
  • 3 tbsp sushi seasoning-2 half sheets nori (seaweed)-1 Japanese cucumber julienned-2 slices of unagi-1 avocado -Salmon roe (ikura)
  • 1 tsp sesame seeds
  • Microgreens, optional for garnish
  • Edible flowers, optional for garnish

Unagi sauce

  • ½ cup soy sauce
  • ½ cup mirin
  • ¼ cup granulated sugar

Directions

1. Rinse 300g of Calrose rice and cook with 1 ½ cup water.

2. Then mix in sushi seasoning and put a damp towel on top of bowl or hanegiri (whichever you are using)

3. Slice cucumber, unagi, and avocado into thin strips/slices.

4. Place nori on bamboo mat, spread rice evenly, then flip so rice faces down.

5. Add cucumber, imitation crab and unagi in center. Roll tightly into a log.

6. Lay avocado slices on top, cover with plastic wrap, press gently with mat.

7. Slice roll into 8 pieces

8. Mix soy sauce, mirin, and sugar and simmer for 10 minutes until honey like texture.

9. Drizzle unagi sauce, sprinkle sesame seeds, garnish as desired.
